COOKING WITH KIDS: COCONUT CURRY MANGO CHILI

I’m putting this warning out now. Once you serve this, you’ll be eating it weekly. Kids love it. Adults love it. WIN WIN, my friends.

This one pot of goodness is super easy to make [even with the kids! So many great ingredients they can “add” themselves], can be frozen or made the night before [in fact, it’s almost better made the day before as is with most chili’s], and is great for leftovers.

Serve with Naan bread + rice or potatoes and you have yourself one heck of a meal!

ALSO – It’s loaded with carrots, beans, chickpeas and corn that your kids will gobble up!img_4602COCONUT CURRY MANGO CHILI

Ingredients ||

1/2 lb Ground Turkey

2 (10.75 ounce) cans Tomato Soup

1 1/4 cups Water

1 tbsp minced Garlic

1 (15 ounce) can Chickpeas [aka. Garbanzo Beans], drained + rinsed

1 (15 ounce) can Red Kidney Beans [OR try a Mixed Bean Blend!], drained + rinsed

1/2 cup chopped Carrot

1 can Corn (optional), drained

1/4 cup Mango Chutney

3 tbsp Curry Powder [i like Madras Curry – Mild, for the kids]

1 tsp Onion Powder

Salt + Pepper, to taste

1/2 cup Coconut Milk, divided

Directions ||

1] In a large frying pan on medium heat, break the ground turkey into small bits. Cook till completely browned and no longer pink, about 5-7 minutes. Drain excess grease if there is any.

2] Combine the tomato soup, water, and minced garlic to a large pot; Bring to a boil. Add the cooked turkey, and return to a boil. Lower temperature to medium-low and add chickpeas, kidney beans, corn (optional), carrots, mango chutney, curry powder, onion powder and salt + pepper. Stir and bring to a simmer. Add a cover to the pot and continue to cook till the chickpeas are softened, about 15 minutes.

3] Stir in 1/4 cup of the coconut milk to the chili, cover again and continue to simmer for an additional 15 minutes. Pour the remaining 1/4 cup coconut milk to the chili, stir and simmer 30 – 45 minutes more.

Serve with Rice or Potatoes and Naan Bread.

*You could add diced potatoes right into the chili during step 2, if you’d like. Sliced mango added also tastes delicious!

**Tastes even better if made the day before!
